Fried Rice Recipe
Fried rice is one of the most popular additions to a Chinese meal. It
is even considered a course of its own at some Chinese banquets. There
are countless variations on the traditional fried rice dish, and many
regions in China boast their own recipes using local ingredients.
Outside of China, even more fried rice variations have been created to
meet the demands of non-Chinese populations.
Fried rice is especially common at Chinese fast-food establishments
in the West, and on Asian buffets. In some countries, it is even served
by street sellers as a dish on its own. The many variations on fried
rice naturally call for various ingredients to be added. T he recipe
below is one basic form of friend rice that can be supplemented with
other ingredients to create more substantial dishes. See the notes on
variations at the bottom for more creative ideas.
This recipe serves 4 to 6 people.
Ingredients:
- 2 cups white rice
- 4 cups water
- 2 cloves garlic (minced)
- 1 medium onion, (diced)
- 2/3 cup carrots (chopped)
- ½ cup frozen green peas
- 2 large eggs
- 1 teaspoon salt
- Pepper to taste
- 4 tablespoons oil for stir-frying, or as needed
- 1 tablespoon soy sauce
- 1 teaspoon sesame oil
- 2 green onions (chopped)
Directions:
- In a medium saucepan, bring water to a boil. Add rice and reduce
heat to medium. Cover and simmer for 20 minutes or until most of the
water is absorbed and rice is moist. When rice has finished cooking,
remove from heat and cool.
- Heat a skillet or work to medium-high heat. Add oil, garlic, and
vegetables. Cook until vegetables are tender (2 – 4 minutes)
- Crack eggs into skillet / wok and stir quickly to scramble.
- Stir in the cooled rice and continue heating (2 – 3 minutes).
Stir constantly while heating to prevent rice from sticking. More
oil may be added if necessary.
- Add soy sauce and sesame oil. Toss mixture to coat.
- Stir in green onions.
- Serve warm.
Variations:
For a Healthy Twist:
- Use soy sauce that is low in sodium.
- Substitute cooked brown rice for the white rice.
- Cut back on the oil used, or switch to grapeseed oil.
Adding more vegetables can pack nutrients into fried rice. Some
popular Chiense additions to the dish are: mushrooms, bean sprouts,
bamboo shoots, celery, and bell peppers.
For Meat Lovers:
Any of the following meats can be added to make fried rice into a
meal of its own. Meat should be cut into small cubes and cooked
separately. It can then be added to the skillet or wok at the same time
as the cooked rice. Popular meat options for fried rice include pork,
beef, chicken, and duck. In some cases, bacon is also added to fried
rice.
For Seafood Lovers:
Shrimp fried rice is an especially popular variation in some areas.
Shrimp should be cooked prior to adding to the skillet or wok. It can be
tossed into the dish at the same time as the cooked rice.
